The Cuisine of Alboraya
Alboraya’s cuisine is a true reflection of the Mediterranean diet—healthy, diverse, and rich in time-honored recipes. It is primarily based on fresh local produce, including vegetables and greens, with rice often serving as a key ingredient.
Tiger Nut (Chufa)
The most distinctive crop of Alboraya’s farmlands is the tiger nut (chufa), a product that holds the prestigious Denomination of Origin Chufa de Valencia. From this tuber, the world-famous horchata is made—a sweet and refreshing drink that has made Alboraya known far beyond its borders.
Today, local entrepreneurs and businesses continue to innovate, developing new products featuring chufa de Valencia as their main ingredient. These include tiger nut liqueur, artisanal beers, oils, and chocolates, which are increasingly appreciated by the most discerning palates.
